Barbecue Chicken and Ribs What Is Better on a Weekend.

Tip: Low and Slow

Having problems with the chicken setting the grill on fire or the chicken looking like the charcoal when its done? Well read on and I will tell you how to correct this issue.
As with all barbecue a barbecue chicken recipe should have the statement "Low and Slow". The problems comes from the heat being to high and the fats from the chicken skin flaring up. The other problem is that a lot of weekend cooks maranade the chicken in the barbecue sauce. The sauce will burn so wait till the chicken is almost done to baste the chicken with the sauce.


Low and Slow is the way to perfect chicken, so keep the temperature around 230 to 255 degrees. Now this will take longer to cook but the chicken will be moist and most importanlly wont look like the charcoal.
You can buy a tray of cut up chicken for about $12.00 or buy a whole chicken for between $3 and $5 dollars and cut it up yourself. Ill do the cuting and use the money I saved to buy the good beer.
I also use a dry rub and let the chicken maranade with the rub for a couple of hours before grilling.


Time to Relax: Remember the money you saved and the good beer you bought with it?  Now is the time to open one of those beers and relax, because it could take up to 2 ½ hours for that chicken to be done. But the up side to this is that because you are cooking low and slow and you havent added the sauce yet, you don't have to poor that good beer on it to put out the fire. Now you will want to baste the chicken once during the cooking and i use a fruit juice like Cranberry or Apple. But don't keep opening the grill it will take even longer.


Do it now Add the sauce during the last 5 or 10 minutes of the cooking just to coat the chicken. Don't put it on with a firehose just coat it and make sure it doesn’t flare up and waste all that relax time you just had, plus you probably drank all that good beer and what will you use to put out the fire.
