Boil or Not to Boil?

There is good and bad about pre-cooking spareribs in water but lets not forget the science! Ribs or meat of any kind should not be boiled but cooked at a temp below boiling.
• Good: Spareribs being a fatty meat, lots of cooks will prefer to parboil them a short while to release the fat and to tenderize them. Parboiling will all so shortent the time needed on the grill.
• Bad: Boiling will release the fat but also removes a lot of the natural flavor of the spareribs.

Even though spareribs are generally basted with a sauce, they can still tend to be dry. The Low and Slow methed of cooking can both tenderize and remove the fat while keeping the flavor and moisture in the meat.

I personally do not par-boil, if im going to spend the money to have ribs then im going to make the most of them.
